You Need the Following Ingredients:
- 8 1-ounce squares bittersweet chocolate, chopped
- 1/4 cup cream
- 2 tablespoons unsalted butter
- 1/2 cup chocolate cake crumbs (use a store-bought cupcake or two without filling and with icing removed)
- 2 teaspoons dark rum
- 1/2 cup chocolate jimmies or sprinkles
To make your truffles, line a baking sheet with aluminum foil or parchment paper. Place the chopped chocolate in a heatproof, microwave-safe bowl. In a small saucepan, combine the cream and butter and place the saucepan over a low heat, bringing it to a boil. Pour this over the chopped chocolate and stir until the mixture is melted and smooth. Stir in the cake crumbs and rum. Set this aside until it becomes firm but not hard.
Next, form heaping teaspoons of the chocolate mixture into balls, and then roll these balls in the chocolate sprinkles. Place these on the prepared tray and refrigerate for 30 minutes or until firm.
You can serve your rum truffles as is or you might have vanilla ice cream on the side. Because they’re so rich, they’re also a perfect choice with tea or you might serve them with plain milk. You can also mix up the recipe to your own taste by for example using another flavor of cake crumbs such as white cake or raspberry. Another way to create a different flavor is to roll the truffles in chopped chocolate of any variety rather than sprinkles. You could also use cocoa powder.
